Bitter vegetable curry - Sukto 

How to make Sukto (Bitter vegetable curry)

Ingredients - 


2 large green banana (peeled off and large sliced)
250 gm potato (peeled off and large sliced)
200 gm drumstick 
100 gm sweet potato 
200 gm eggplant
100 gm bitter gourd (thin round sliced)
4-6 bigger dal dumplings
1 Tbsp mawa 
1 tsp sugar
1 cup milk 
1 tsp ghee
1/2 tsp Ajmod (Radhuni)
Salt to taste

For saute -
1 tsp  paanch phoron (five spices),
2-3 bay leaf 
2-3 dry red chili

For curry paste - 
1 tsp ginger, 
1 tsp poppyseeds,
1 tsp cumin,
1 tsp black pepper, 
1 tsp mustard 

For dry roasted spice powder - 
1 tsp paanch phoron, 
1 tsp ground coriander 
1 tsp ground cumin

Cooking Instructions - 

First,  fry the dal dumplings. keep aside.
Now, fry bitter gourd. keep aside
Grind all the curry paste ingredients to make thick paste. 
Dry roast and grind paanch phoron, ground coriander and cumin 1 tsp each

Heat oil in a pan, saute saute paanch phoron (five spices), bay leaf, dry red chili
Add, potatoes, green banana, eggplant, sweet potato, drumstick.  you may also add other seasonal vegetables
add salt. put lid on for getting boiled.
After 3/4 minutes open the lid, add the curry paste, mix well. pour 2 cup water
put lid on and let it boil for 10 minutes.
When this get half cooked, add dal dumplings. If you add this before, then dal dumplings shall get diluted.
When vegetables get boiled add 1 cup milk, 1 tsp sugar. Mix well.
Now, add  spice powder, 1/2 tsp Ajmod (Radhuni)
After mixing, add, fried bitter gourd, mawa. 
Before off from flame, add ghee.

That's it. Bengali Sukto is ready.
