Chicken Momo recipe hunting made a Gangtok chef remember this author even after 7 years of revisiting Gangtok after her 1st honeymoon trip there!

Chicken Momo Ingrediens

For 30-35 dumplings
All you need -
(For dough)
4 cups Whole Flour 

pinch of salt
water to knead the flour into a not-so-solid dough

(For stuffing)
750 g Chicken (finely minced)
200 g carrot (finely chopped)
250 g cabbage (finely chopped)
200 g onion (finely chopped)
25-30 flakes of garlic (finely chopped)
50 g cilantro (finely chopped)
50 g ginger (finely chopped)
1 Tbsp butter oil
1 tsp soya sauce
1 tsp vinegar
1/2 tsp Red chili powder
1 tsp black pepper powder
1 egg
salt to taste

(For Momo Sauce)
1 big Tomato (boiled and skin off)
1 big potato (boiled)
5-6 dried red chili (boiled)
8-10 flakes of garlic
2 tsp lemon juice
1 tsp sugar
salt to taste
How to Make Chicken Momo


Make the dough not too tight, rather little softer.
Cut the dough into little pieces, and spread the pieces with a roller into thin paper like sheets.

Mix all the stuffing ingredients together very well and leave for 30 minutes in freeze.

Blend the Sauce ingredients in a juicer, add sugar, salt and lemon juice to taste.

After 30 minutes, fill the stuffing in the thin flour sheets and shut the ends making a frill on one side of the flour sheet. 
fill all the 30-30 dumplings in this way.
Now pour two cups of water in a steamer or pressure cooker. Let it come to boiling. Now put the dumplings in a greased pan and put inside the steamer or pressure cooker. 
close the lid.
Let it get steamed for 5/7 minutes.
put off the flame.
Take out the steamed dumplings.

Serve it hot with Dumpling/Momo sauce!
